Italian Tacos

I think tacos are great but sometimes I want to change it up, add some new flavours. This morning I surprised Anthony with soft tacos filled with an Italian style filling – YUM!

Here’s the what I did:



half of a white onion (diced)

3 celery stalks (chopped thinly)

8 large green marinated olives

1/4 cup olive brine (this is why I got the marinated in fresh herbs kind)

2 tbsp Earth Balance

2 tbsp Vegenaise

4 soft shell taco shells (Udi’s is my favourite!)



Start by sautéing the onions in the Earth Balance. Once they’re beginning to caramelize, add the celery and olives. Wait about 5 minutes then add the olive brine, turn up the heat and let t sizzle!

I like to keep my bread type things in the freezer since I don’t go through them very fast, so if you’re like me and have frozen taco shells, I usually pop them in the toast on medium darkness – they come out awesome 🙂

Now to assemble. Take the warm taco shell, spread a bit of Vegenaise on each one, divide the filling between them, and top with salsa.
