Riso Bello Mushroom Risotto

I must confess… I have a deep, dark cheese fetish. I know I know, it’s terrible, but it’s true! When I lapse in my veganism, it’s usually at the hands of some aged white cheddar or mild, lightly marbled blue. Alas, tonight was one of those nights. They don’t happen often but when they do, it’s because some gooey deliciousness caught hold of me and I was forced to eat it lol

Alright, time to get rizeal yo. I LOVE RISOTTO 😀 It tastes awesome and, best of all, is gluten free. I’ve experimented with using vegan cheese when I make it but haven’t had major success yet. So tonight I made a long standing favourite of my “Riso Bello Mushroom Risotto”. It’s quick and stupidly easy, which is great when I get home late and I’m kind of spaced out. As you can see from the pic, it’s creamy and full of porcini mushroom – yum 🙂

I like to keep a few in my pantry for busy nights and sometimes I make it when my non-vegan friends come over so they think I’m normal 😛 shhh, don’t tell them I’m not normal (I think I’ve done a pretty good job of leading them on so far and I don’t want my cover blown).
