Wilted Kale Salad

So here we are at day 30 of my 30 day blogging challenge. I have had so much fun doing this and really loved all of your feedback 😀

I thought I should end this on a healthy note so here is a new favourite of mine. As always, it’s super easy 😉

Ingredients:

2 cloves minced garlic

1/2 red onion, chopped

2 tbsp Earth Balance

3 cups mixed kale, chopped/shredded into thin strips

2 tbsp balsamic vinaigrette

2 tbsp fresh lemon juice

2 tbsp sesame seeds

2 chopped tomatoes

 

First, melt the Earth Balance in a frying pan. Next you’ll add the garlic and onions, sautéing until they are translucent. Finally you add the rest and put a lid on to wilt the kale. Stir this around until it’s well mixed. Enjoy 🙂
