I really love Mexican food: burritos, enchiladas, quesadillas, but my favourite is tacos. They’re easy, quick and don’t need much prep.
Here’s my most recent #FarmersMarketFeast
1/2 white onion, diced
4 garlic scapes, chopped (If you don’t know what this is, click here)
1 cup organic corn kernels
1 can beans (I like using “medley” to give some variety in every bite)
1 tsp chilli powder
1 tsp onion or shallot powder
1/2 tsp ground cumin
1 tsp paprika
Ok, so when you’ve got all the ingredients ready and a pan is heated with some oil on your stove, throw in all the ingredients. That’s it! It took me about 10 minutes of stirring to get everything heated up and mixed to a point I liked, so just keep tasting as you go. You can also chop some cilantro or tomatoes to add on top for when you assemble the tacos; you can eat this out of a bowl, use large lettuce leaves to wrap the filling, or you can get gluten free tortillas (I use Udi’s). I also like to add some Daiya or Veganaise, but that’s all just extra. You can have it really simple or make it more complicated when you’ve got some time. Whatever works for you.
