Taco Pizza

I LOVE PIZZA!!!!!! That was the hardest thing for me to give up when I found out I was celiac, so I try every kind of GF pizza crust I can find looking for great options to rave about. Tonight I used Udi’s pizza crust and it was awesome! I used salsa mixed with goddess dressing instead of pizza sauce, added some “meatless chicken” by Sol Cuisine, 1/4 cup of chopped cilantro, 1/4 organic from corn and topped to off with Daiya Pepper Jack vegan cheese. All in all, it took about 20 mins (chopping and baking included). It’s possible that my tastebuds have died off from boredom due to poor gluten free options, but I’m pretty sure this was delicious AND my boyfriend, who’s more of a “normal” eater, said it was one of the best pizzas he’s ever had.
