Making waffle mix from scratch can be really tricky – believe me, I’ve failed many MANY times.
This is my favourite recipe so far because it gives fluffy, easy to remove waffles and is vegan. Something to keep in mind when stocking your pantry: good quality ingredients dramastically (dramatically+drastically) improve any meal. I buy as many organic, natural products as I can find and afford. I think one reason why my baking always tastes great is because I use really high quality vanilla.
2 cups gluten-free flour (I used Pamela’s Artisan Blend)
4 teaspoons baking powder
2 tablespoons coconut sugar
pinch of salt
1 1/2 cups vanilla coconut milk
1 cup applesauce
1/4 cup organic coconut oil, fully melted
2 teaspoons pure, natural vanilla
1. Preheat waffle iron.
2. In a large bowl, mix together flour, salt, baking powder and sugar; set aside.
3. Stir in the coconut milk, coconut oil and vanilla. Pour the mixture into the flour mixture, add applesauce; beat until blended.
4. Ladle the batter into the preheated waffle iron. Cook the waffles until golden and crisp (about 7 minutes, depends or your waffle though so check it every few minutes).
I like to add Earth Balance and half a sliced banana on top and Anthony prefers raw agave. It’s totally up to you of course 😛
